2008 August > Make it in a SNAP - Sixth Sense Catering

Ingredients - 2oz of diced Sundried Tomatoes - 6oz of Goat Cheese - 2 chicken breasts - 1/2 tbsp of salt - Oregano bunch Directions - Mix sundried tomatoes with goat cheese and set aside - Cut chicken breast on flat side from thick end of breast to thin end WITHOUT cutting entirely through breast - Make two side incissions, within first cut, in the thick end of breast, to creat a pocket - Make sure to not cut through to other side of breast - Place mixture into pocket - Drizzle oregano and salt on breast - Cook at 350 degrees for 12-15 minutes - Serve on your choice of vegetable bed
